Ingredients
One bunch of Swiss chard, stems removed and leaves chopped
One small onion, finely chopped
1/2 tsp cumin seeds
1/4 tsp black mustard seed (optionally)
2-3 pieces of curry leaves, (optionally)
Two cloves garlic, minced
1 tsp ginger, minced
1-2 fresh chili (small)
One tablespoon of olive oil or coconut oil
One can (13.5 oz) coconut milk
Salt and pepper to taste
½ tbsp lime or lemon juice
Instructions
Thoroughly wash the Swiss chard and separate the stems from the leaves. Then, chop the stems into small pieces and the leaves coarsely.
Heat the oil in a large skillet over medium heat.
Add cumin, black mustard seeds, and curry leaves.
Add the chopped onion and sauté until soft, approximately 4-5 minutes.
Add the minced garlic, ginger, and chopped chili, and continue cooking for 2-3 minutes.
Add the Swiss chard to the skillet and cook until it wilts.
