Instructions
Toast the Spices
Heat a dry skillet over medium heat.
Add coriander, cumin, cardamom pods, cloves, cinnamon sticks, bay leaves, star anise and fennel seeds.
Toast the spices, stirring frequently, for 2–3 minutes until fragrant. Be careful not to burn them.
Cool the Spices
Transfer the toasted spices to a plate and let them cool completely.
Cooling prevents moisture from forming during grinding and ensures a smooth powder.
Grind the Spices
Add the cooled spices to a spice grinder or mortar and pestle.
Grind them into a fine powder. If using nutmeg, grate it directly into the mix.
Store the Garam Masala
Transfer the garam masala to an airtight jar.
Store in a cool, dry place for up to 6 months to maintain freshness.
