One-Pot Red Lentil Green Curry Rice (Khichdi Style)

Ingredients
½cupred lentilsmasoor dal, rinsed
½cupricebasmati or any white rice, rinsed
1tbspoilcoconut or olive
1small oniondiced
2clovesgarlicminced
1tspgrated ginger
1–2 tbsp green curry paste
½cuppeas or edamame
1can400 ml coconut milk ( 1 1/2 cups)
2cupswater or vegetable broth
2tsplime or lemon juice
Instructions
Heat oil in a pot.
Cook the onion until soft.
Add garlic + ginger.
Add curry paste
Stir and cook for 1 minute until fragrant.
Add lentils, rice, coconut milk, and water. Mix well.
Bring to a boil.
Lower the heat, cover, and cook 20–25 minutes
Stir occasionally to prevent sticking.
It should be soft, creamy, slightly porridge-like (like khichdi).
Add a splash of water if needed.
Add peas or edamame, salt, and lime juice. Stir gently.
Texture Tips (Important!)
Want softer, porridge-style khichdi → add an extra ½ cup of water
Want more fluffy rice texture → reduce water slightly
