Instructions
Heat the olive oil in a saucepan over medium heat. Sauté the onion 5–6 minutes until softened.
Add the garlic, tomato paste, cumin, paprika, coriander, cinnamon, turmeric, and cayenne. Cook for 1 minute until fragrant.
Stir in the diced tomatoes, chickpeas, and potato, along with vegetable broth or water.
Bring to a simmer.
Cook covered for 15–20 minutes, until the vegetables are tender and the stew has thickened slightly.
Stir in the spinach and cook for another 2–3 minutes, until wilted.
