Ingredients
1 lb ground beef or chicken
1 onion, diced
1tspgarlic powder
1tsponion powder
1tsproasted red pepper seasoning (optional)
salt to taste
Sauce
1 cup Greek yogurt
½ cup ketchup
¼tsp mustard (optional)
1tspolive oil
salt to taste
Topping
1cupshredded cheddar cheese
2tomatoes, sliced
1white or red onions, sliced
¼pickles, chopped
2cupsLettuce, sliced or baby spinach
Instructions
Cook the Ground Beef
Heat a large skillet over medium heat.
Add ground beef to the skillet. Break it up with a spatula and cook until browned and no longer pink, about 5-7 minutes.
Drain excess fat if necessary.
Add diced onion, garlic powder, onion powder, and red roasted pepper seasoning to the beef. Sauté until softened, about 2-3 minutes.
Sauce
Add Greek yogurt, ketchup, olive oil, and mustard in a medium bowl.
Mix until everything is well combined.
Taste and adjust the salt.
Assemble the Bowls
Divide lettuce or baby spinach among serving bowls.
Spoon the seasoned ground beef mixture over the lettuce.
