Ingredients
For the bowl
1cupcooked black beansor canned, rinsed
1cupgreen cabbagethinly shredded
1medium carrotjulienned or grated
1red or yellow bell peppersliced
1cupcooked rice or quinoaoptional for a fuller meal
2tbspfresh parsley or cilantrochopped (optional)

Tahini Turmeric Dressing
2tbsptahini
2tablespoonsolive oil
1tablespoonlemon juice
2teaspoonsmaple syrup
¼teaspoonturmeric
1–2 tbsp waterto thin to your preferred consistency

Instructions
Prepare the vegetables
Thinly shred the cabbage, grate or julienne the carrot, and slice the bell pepper.
Warm the beans (optional)
Heat the black beans in a small pan with 1/4 tsp of cumin and salt for 2–3 minutes.
Make the dressing
In a small bowl, whisk together olive oil, lemon juice, maple syrup, turmeric, tahini, salt, and pepper.
Assemble the bowl
Add rice or quinoa to the bowl (if using). Arrange cabbage, carrots, bell peppers, and black beans on top.
Finish and serve
Drizzle with the tahini turmeric dressing and sprinkle with fresh herbs.
