Ingredients
1cup coriander seeds
1/4 cup dried curry leaves
1/4 cuprice
2tbsp cumin seeds
6podsof cardamom
3-inchcinnamon sticks
1mace
Instructions
In a pan add coriander seeds and dry roast them over low heat stirring continuously for 5 minutes.
Remove and keep aside.
In the same pan add curry leaves, rice, cardamom pods, cumin seeds, cinnamon sticks, and mace, and dry roast them for 3 to 4 minutes or until fragrant.
Remove and combine all your roasted ingredients in a large bowl to cool down.
Place all the ingredients in a spice grinder or a mortar and pestle and grind to a fine powder.
