Ingredients
1whole chicken cut into cubes ( about 2kg)
3medium potatoes cut into cubes
1medium onion, sliced
4 cloves garlic, minced
1tbsp ginger, minced
3tbspvegetable oil
1/2tspcumin seeds
1/2tspblack mustard seeds
5 to 6fresh or dried curry leaves
1tbsp chili powder
1/2tbspturmeric powder
2 tbspFijian masala or curry powder (see the note below)
1cup of water
1/4cupchopped cilantro leaves (option)
1tspchili oil (option)
salt to taste
Instructions
Over medium heat, in a large pan heat the oil.
Add cumin, mustard seeds, and curry leaves, and cook for 30 seconds.
Add sliced onions and saute until onions are translucent.
Add minced garlic and ginger, stir and cook for 2 more minutes, before adding all the spices, chili, turmeric, Fiji masala, or curry powder.
Cook 2 more minutes, oven low to medium heat, stirring occasionally.
Add chicken and diced potatoes, and season with salt, stir to coat in all the spices, cover the pan and cook for 5 to 10 minutes or until all the liquid evaporates
Add water cover and cook for 5 to 10 minutes or until chicken is cooked over low heat.
Garnish with cilantro leaves.
Serve with hot rice or roti.
Notes
Curry powder can be a substitute for Fijian masala.Fijian masala can be found in any east Indian grocery store.
