Ingredients
For the Meatballs
1 pound ground chicken
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 tsp thyme
1- large egg
2- cloves garlic, minced
Salt and pepper to taste
Oil for cooking
For the Sauce
2 -tablespoons unsalted butter
1/2 cup cherry tomatoes, halved
1/2- cup sun-dried tomatoes, chopped
3 -cloves garlic, minced
1/2 cup chicken broth
1 cup heavy cream
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Fresh basil for garnish
Instructions
. Prepare the Meatballs
Combine ground chicken, breadcrumbs, Parmesan cheese, thyme, minced garlic, egg, salt, and pepper in a large mixing bowl.
Mix the ingredients until well combined.
Shape the mixture into meatballs, about 1 to 1.5 inches in diameter.
Make about 20 to 24 meatballs.
Cook the Meatballs
Heat olive oil in a skillet over medium heat.
Brown the meatballs on all sides until cooked, about 5-7 minutes.
Transfer the meatballs to a baking dish and set aside.
Prepare the Sauce
In the same skillet, add butter and sauté minced garlic until fragrant.
Add cherry tomatoes and sun-dried tomatoes, cooking for 2-3 minutes until the tomatoes soften.
Pour in chicken broth and heavy cream. Stir well.
Add grated Parmesan cheese. Stir until the sauce thickens, about 5 minutes.
Taste the sauce and adjust the salt and pepper.
Add the meatballs to the sauce and cook for about 10 minutes until the sauce is bubbly and the meatballs are cooked.
