2 cups almond flour
1 cup granulated sugar
3 - large egg whites at room temperature
1/4 teaspoon vanilla extract
1 cup chocolate chip
Confectioners' sugar for rolling
Instructions
Preheat your oven to 300°F (150°C)—line baking sheets with parchment paper.
In a separate bowl, beat the egg whites for a few minutes.
Add sugar, vanilla, and almond flour to the egg whites. Continue folding until you have a smooth, consistent batter.
Scoop out small portions of the batter and roll them into balls. Roll the balls in confectioners' sugar to coat them lightly. About 20 to 24 balls
Place the coated balls on the prepared baking sheets, spacing them about 2 inches apart. Press the cookies in the middle with your fingers and add some chocolate chips.
Bake for 15-20 minutes or until the cookies are lightly golden brown on the bottom but still soft inside.
Allow the Italian cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
