Ingredients
2lbs peeled, cored, and cut into ¼-inch thick slices, or diced apples ( any variety )
2tbsp lemon juice
3/4cupbrown sugar
2tbsp rice flour
1cupground almonds
1/2cup gluten-free sweetened shredded coconut
1/4cupsliced almond
3/4cup cold butter or margarine, cut into pieces
1tbsp ground cinnamon
Instructions
Preheat your oven to 350°F (180°C).
Melt 1/4 cup butter.
In a large baking dish combine slices of apples, ½ cup brown sugar, lemon juice, 2 tbsp rice flour, melted butter, and 1/2 tbsp cinnamon and toss to coat.
Mix ¼ cup brown sugar, ground almonds, slices almond, sweetened shredded coconut, and ½ tbsp cinnamon in a separate bowl. Cut in the 1/2 cup cold butter using a pastry cutter or fingers until the mixture is crumbly.
Sprinkle the almond flour mixture over the top of the apples.
Make sure to cover all of the apples.
Bake the crisp for 35-40 minutes, or until the top is golden brown and the apples are tender.
Serve the apple crisp warm, with a scoop of ice cream or a drizzle of caramel sauce if desired.
