Ingredients
2 cups shredded or diced cooked rotisserie chicken
2- tablespoons olive oil
1- large onion, diced
3- cloves garlic, minced
1- can of white beans (such as cannellini or kidney beans)
Few fresh chopped green chili (adjust for heat preference)
3 cups chicken broth
2 -teaspoons ground cumin
1 - teaspoon ground coriander
1- teaspoon dried thyme
1 cup frozen or canned corn kernels
2 tsp lime juice
1 cup cream
1/4 cup Chopped cilantro
Salt and pepper to taste
Topping Optional
1 cup shredded cheese (any kind)
Sliced avocado, sliced green onions, sliced jalapeños, and sour cream
Instructions
Heat the oil over medium heat in a large pot.
Add diced onion and minced garlic. Sauté for about 3-4 minutes, or until the onions become translucent and fragrant.
Add the cooked chicken, diced green chilies, corn, ground cumin, coriander, thyme, and broth to the onions. Stir well
Drain and rinse beans in a colander.
Smash some of the beans with the back of the spoon.
(this step is optional; it will give the chili a creamy and thick texture )
Add the beans to the chill.
Bring the mixture to a boil, reduce the heat to low, cover the pot, and simmer for 10-15 minutes to allow the flavors to meld.
Add cream, lime juice, and chopped cilantro.
Adjust the seasoning with salt and pepper as needed.
Ladle the white chicken chili into bowls and garnish with shredded cheese, sliced avocado, green onions, jalapeños, and sour cream.
Serve hot with tortilla chips and crusty bread.
