Ingredients
3 tbsp butter
1- medium onion, chopped
2- pounds of mushrooms, sliced
3- cloves garlic, minced
1-tbsp thyme
2 cups chicken or vegetable broth or water
1 cup heavy cream
1/4 balsamic vinegar
Salt and pepper, to taste
Instructions
Melt the butter in a large pot over medium heat. Add the onion and cook until translucent, about 5 minutes.
Add the sliced mushrooms, thyme, balsamic vinegar, and garlic.
Cook until the mushrooms release their moisture, about 10 minutes.
Add broth or water to the mushroom mixture.
Bring the mixture to a simmer and cook for 10 minutes, stirring occasionally.
Add heavy cream.
Heat the soup over low heat until heated through.
Season with salt and pepper to taste.
Serve the cream of mushroom soup hot, garnished with fresh parsley or chives if desired.
