Ingredients
1canchickpea, drained and rinse ( 796ml )
1medium tomato, diced
1mediumonion, chopped
4-5curry leavesoptional
3clovesgarlic, chopped
½-inchginger
1tbspvegetable oil
½tspchili powder
1tspcurry powder
½tsp turmeric
¼tspcumin seedsoptional
¼blackmustard seedsoptional
1tsplemon juice
½cupwater
Salt to taste
Instructions
Heat the oil in a skillet over medium-low heat.
Add cumin, mustard seeds, and curry leaves with chopped onions and cook until brown and caramelized.
Add chopped garlic and ginger and cook for 20-30 seconds.
Add curry powder with chili, turmeric, and salt.
Cook for another 30 seconds before adding chickpeas and diced tomatoes.
Add water, bring to a boil, reduce the heat to low, and cook for 10 minutes.
