Ingredients
4 - eggs
4 -tablespoons heavy cream
2- tablespoon butter or margarine
2 cups fresh spinach, washed and chopped
1/2 cup shredded cheese (such as Gruyere or cheddar)
1/2 cup diced onions
1- clove minced garlic
Salt and pepper
Chopped fresh herbs, such as chives, parsley, or thyme (optional)
Instructions
Preheat the oven to 375°F (190°C).
Melt one tablespoon of butter in a frying pan over medium heat.
Add diced onion and cook for 2-3 minutes.
Add garlic and spinach, and saute for a few minutes.
Grease four ramekins or small oven-safe dishes with butter or margarine .
Divide the cooked spinach mixture evenly among the ramekins.
Crack one egg into each ramekin on top of the spinach.
Add 1 - tablespoon of heavy cream to each ramekin on top of the egg.
Season each egg with salt and pepper to taste.
Sprinkle shredded cheese evenly over the top of each egg.
Place the ramekins in a baking dish and add enough hot water to reach halfway up the sides of the ramekins.
Bake the eggs for 8-10 minutes or air-fry for 3-4 minutes.
Remove the ramekins from the oven and let them cool for a few minutes before serving.
If desired, sprinkle chopped fresh herbs over the eggs before serving.
