Ingredients
2 cups all-purpose flour
1 tablespoon baking powder
1teaspoon salt
4Tablespoons of cold unsalted butter, cut into small pieces
1 cup grated cheddar cheese
3/4 cup whole milk, plus extra for glazing
1 large egg
Chive Butter
1 cup unsalted butter, softened
2 tablespoons fresh chives, finely chopped
¼ teaspoon salt
Instructions
Preheat the Oven
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Prepare the Dry Ingredients
Whisk together the flour, baking powder, and salt in a large bowl.
Incorporate the Butter
Add the cold butter pieces to the flour mixture. Rub the butter into the flour with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Add the Cheese
Stir in the grated cheddar cheese until evenly distributed.
Reserve a small handful to sprinkle on the scones before baking.
Mix the Wet Ingredients
In a separate bowl, whisk together the milk and egg. Pour this mixture into the flour mixture, stirring until just combined.
Shape the Dough
Turn the dough onto a floured surface and knead it gently until it comes together. Pat the dough into a circle about 1 inch thick.
Cut the Scones
Use a 5cm (2 inch) round cutter and place them on the prepared baking tray. Gather the dough scraps and repeat until all the dough is used.
Bake
Brush the tops of the scones with a bit of milk and sprinkle the reserved cheese on top. Bake in the oven for 10-15 minutes or until the scones are well-risen and golden brown.
Transfer to a wire rack to cool slightly.
Chive Butter
Allow the butter to come to room temperature so it is soft and easy to mix.
Combine the softened butter, chopped chives, and salt in a bowl. Mix until well combined.
Transfer the butter mixture onto a piece of parchment paper. Roll it into a log shape and wrap it tightly. Refrigerate until firm, about 1 hour.
