Ingredients
3cupschopped broccoli florets
1cup grated carrot
1-medium onion, chopped
2-cloves garlic, minced
2cupswater, vegetable or chicken broth
1cup heavy cream
1cup grated cheddar cheese
2-tbsp butter
Salt and pepper to taste
Instructions
Melt the butter in a large pot over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent about 5 minutes.
Add the broccoli florets and grated carrots to the pot and sauté for another 5 minutes, stirring occasionally.
Pour the broth into the pot and bring it to a boil. Reduce the heat to low and let the soup simmer for 10-15 minutes or until the broccoli is tender.
Stir in heavy cream and cheese to the soup.
Season with salt and pepper to taste.
Cook for another 4-5 minutes over low heat
Serve the cream of broccoli soup hot, garnished with additional broccoli florets if desired.
