Ingredients
1 - large head of cauliflower, washed and cut into florets
2- tablespoons olive oil
1 -teaspoon garlic powder
1- teaspoon onion powder
Salt and black pepper to taste
For the cheese sauce
2- tablespoons unsalted butter
2 -tablespoons all-purpose flour
2 cups milk
1 cup shredded cheddar cheese, (or your favorite cheese)
1 cup shredded gouda cheese
Salt and black pepper to taste
Topping
2- tbsp butter
1/2 cup breadcrumbs
1/4 cup chopped fresh parsley or dried
1/2 cup shredded cheese of your choice
Instructions
Preheat the oven to 350°F.
In a large bowl, toss the cauliflower florets with olive oil, garlic powder, onion powder, salt, and black pepper until evenly coated.
Spread the seasoned cauliflower evenly on a baking sheet lined with parchment paper.
Roast the cauliflower in the oven for 10-15 minutes or until lightly golden brown and tender, stirring halfway through to ensure even roasting.
While the cauliflower is roasting, prepare the cheese sauce.
In a medium saucepan over medium heat, melt the butter.
Once melted, add the flour and whisk continuously for 1-2 minutes to form a roux.
Gradually whisk in the milk, ensuring no lumps form. Continue to whisk until the mixture thickens, about 5-7 minutes.
Reduce the heat to low, add cheese, and stir until melted and smooth. Season the cheese sauce with salt and black pepper to taste.
Once the cauliflower is roasted.
Transfer the roasted cauliflower to a baking dish and pour the cheese sauce over the top, ensuring all the cauliflower is well-coated.
In a small skillet, melt two tablespoons of butter over medium heat. Add 1/2 cup breadcrumbs and chopped parsley.
Sprinkle cheese and breadcrumbs on top of the cauliflower and cheese mixture.
Bake in the oven for 10-15 minutes or until the top is bubbly and golden brown.
Remove from the oven and let it cool for a few minutes before serving.
