Fijian Masala/Curry Powder

Fijian masala is a blend of simple Indian spices. All the ingredients are lightly dry toasted in a pan over low heat, cooled, and then ground to a fine powder in a spice grinder or mortar and pestle.

Each Fijian families , have their own masala recipe depending on their personal preferences, which is passed down to their generation, some like their masala strong and some prefer mild.

Ingredients
  

  • 1 cup coriander seeds
  • 1/4 cup dried curry leaves
  • 1/4 cup rice
  • 2 tbsp cumin seeds
  • 6 pods of cardamom
  • 3 -inch cinnamon sticks
  • 1 mace

Instructions
 

  • In a pan add coriander seeds and dry roast them over low heat stirring continuously for 5 minutes.
  • Remove and keep aside.
  • In the same pan add curry leaves, rice, cardamom pods, cumin seeds, cinnamon sticks, and mace, and dry roast them for 3 to 4 minutes or until fragrant.
  • Remove and combine all your roasted ingredients in a large bowl to cool down.
  • Place all the ingredients in a spice grinder or a mortar and pestle and grind to a fine powder.
  • Store in a sealed jar.
