  • 2 cups shredded or diced cooked rotisserie chicken
  • 2- tablespoons olive oil
  • 1- large onion, diced
  • 3- cloves garlic, minced
  • 1- can of white beans (such as cannellini or kidney beans) 
  • Few fresh chopped green chili (adjust for heat preference)
  • 3 cups chicken broth
  • 2 -teaspoons ground cumin
  • 1 - teaspoon ground coriander
  • 1- teaspoon dried thyme
  • 1 cup frozen or canned corn kernels
  • 2 tsp lime juice
