Creamy White Chicken Chili Recipe
Ingredients
- 2 cups shredded or diced cooked rotisserie chicken
- 2- tablespoons olive oil
- 1- large onion, diced
- 3- cloves garlic, minced
- 1- can of white beans (such as cannellini or kidney beans)
- Few fresh chopped green chili (adjust for heat preference)
- 3 cups chicken broth
- 2 -teaspoons ground cumin
- 1 - teaspoon ground coriander
- 1- teaspoon dried thyme
- 1 cup frozen or canned corn kernels
- 2 tsp lime juice
- 1 cup cream
- 1/4 cup Chopped cilantro
- Salt and pepper to taste
Topping Optional
- 1 cup shredded cheese (any kind)
- Sliced avocado, sliced green onions, sliced jalapeños, and sour cream
Instructions
- Heat the oil over medium heat in a large pot.
- Add diced onion and minced garlic. Sauté for about 3-4 minutes, or until the onions become translucent and fragrant.
- Add the cooked chicken, diced green chilies, corn, ground cumin, coriander, thyme, and broth to the onions. Stir well
- Drain and rinse beans in a colander.
- Smash some of the beans with the back of the spoon.(this step is optional; it will give the chili a creamy and thick texture )
- Add the beans to the chill.
- Bring the mixture to a boil, reduce the heat to low, cover the pot, and simmer for 10-15 minutes to allow the flavors to meld.
- Add cream, lime juice, and chopped cilantro.
- Adjust the seasoning with salt and pepper as needed.
