Chickpea Curry

Ingredients
  

  • 1 can chickpea, drained and rinse ( 796ml )
  • 1 medium tomato, diced
  • 1 medium onion, chopped
  • 4-5 curry leaves
  • 3 cloves garlic, chopped
  • ½- inch ginger
  • 1 tbsp vegetable oil
  • ½ tsp chili powder
  • 1 tsp curry powder
  • ½ tsp turmeric
  • ¼ tsp cumin seeds
  • ¼ black mustard seeds
  • ¼ cup water
  • Salt to taste

Instructions
 

  • Heat the oil in a skillet over medium-low heat.
  • Add cumin and mustard seeds with chopped onions and cook until brown and caramelized.
  • Add chopped garlic, ginger, and curry leaves and cook for 20-30 seconds.
  • Add curry powder with chili, turmeric, and salt.
  • Cook for another 30 seconds before adding chickpeas and diced tomatoes.
  • Add water, bring to a boil, reduce the heat to low, and cook for 10 minutes.
  • Taste and adjust the salt.
