Ingredients
  

  • 3 cups chopped broccoli florets
  • 1 cup grated carrot
  • 1- medium onion, chopped
  • 2- cloves garlic, minced
  • 2 cups water, vegetable or chicken broth
  • 1 cup heavy cream
  • 1 cup grated cheddar cheese
  • 2- tbsp butter
  • Salt and pepper to taste

Instructions
 

  • Melt the butter in a large pot over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent about 5 minutes.
  • Add the broccoli florets and grated carrots to the pot and sauté for another 5 minutes, stirring occasionally.
  • Pour the broth into the pot and bring it to a boil. Reduce the heat to low and let the soup simmer for 10-15 minutes or until the broccoli is tender.
  • Stir in heavy cream and cheese to the soup.
  • Season with salt and pepper to taste.
  • Cook for another 4-5 minutes over low heat
  • Serve the cream of broccoli soup hot, garnished with additional broccoli florets if desired.
