- 3 cups chopped broccoli florets
- 1 cup grated carrot
- 1- medium onion, chopped
- 2- cloves garlic, minced
- 2 cups water, vegetable or chicken broth
- 1 cup heavy cream
- 1 cup grated cheddar cheese
- 2- tbsp butter
- Salt and pepper to taste
Instructions
- Melt the butter in a large pot over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent about 5 minutes.
- Add the broccoli florets and grated carrots to the pot and sauté for another 5 minutes, stirring occasionally.
