Ingredients
- 2-3 boneless, skinless diced chicken breasts
- 2 cups long-grain white rice
- 4 cups water or chicken broth
- 1- medium sliced onion
- 3-4 cloves minced garlic
- 1/4 inch minced ginger
- 4-5 curry leaves (option)
- 1/4 tsp cumin seeds
- 1/4 tsp black mustard seeds
- 1 tbsp oil
- 1 tbsp butter or margarine
- 1½ tbsp garam masala
- 1 tsp coriander powder
- 1 tsp chili powder
- 1/2 tsp turmeric powder
- salt to taste
Cucumber and Yogurt Sauce
- 1 English cucumber, grated
- 1 cup Greek yogurt, plain
- 1/4 cup carrot grated
- 1/4 cup chopped cilantro
- 1 tsp cumin powder
- 1/2 onion, chopped or grated
- 1- clove minced garlic
- salt to taste
Instructions
- In a large pot, heat the butter and oil over medium-high heat.
- Add sliced onions, curry leaves, cumin, and black mustard seeds.
- Sauté until onions are translucent for 5 minutes.
- Add minced garlic, and ginger, cook for 2-3 minutes,
- Add the rice, chicken, garam masala, salt, chili, turmeric, and coriander powder Stir until everything is well combined.
- Add water or chicken broth.
- Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes or until the rice is cooked and the liquid has been absorbed.
- Serve the one-pot chicken and rice hot, and enjoy!
Cucumber and Yogurt Sauce
- Squeeze the grated cucumber, to remove excess moisture.
- Combine all ingredients.
- Mix to combine.
- Taste and adjust seasoning.
