Ingredients
  

For the filling

  • 3-4 small apples ( Pick a very red apple to get a pretty red color ) 
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1- tablespoon lemon juice

For assembling

  • 1- sheet of puff pastry (thawed if frozen)
  • All-purpose flour for dusting
  • 1- egg (for egg wash)
  • 1- tbsp sugar 

Almond Cream

  • 1/2 cup almond flour
  • 1- large eggs
  • 1- tbsp flour
  • 1 tsp vanilla extract
  • 1/4 cup sugar

For serving (optional)

  • Powdered sugar
  • Whipped cream or vanilla ice cream

Instructions
 

Preheat the oven 

  • Preheat your oven to 375°F (190°C).
  • Line a baking sheet with parchment paper or lightly grease it to prevent sticking.

Almond Cream

  • Mix almond flour, egg, sugar, and flour in a small bowl and mix well.

Apple Filling

  • Don't Peel; just core and finely slice the apples.
  • Add the sliced apples, granulated sugar, ground cinnamon, and lemon juice in a medium bowl.
  • Stir well and set aside.

Puff Pastry

  • Roll out the puff pastry sheet on a lightly floured surface.
  • Using an apple-shaped cookie cutter, cut out 8- 12 apple shapes. Depending on the size of your cutter.
  • Place half on the prepared baking sheet. 
  • In the remaining half (1cm smaller than an apple-shaped cookie cutter), a small round cookie cutter cut out the center.
  • Whisk the egg to make an egg wash in a small bowl. 
  • Lightly brush edges with the egg wash and place top over each bottom, pressing edges lightly to seal. Brush tops with remaining egg wash.

Assemble the tarts

  •  Pipe almond cream onto the center of each apple-shaped puff pastry and arrange the apple slices on top of the almond cream.
  • Sprinkle with sugar on the top of the apple.
  • Bake the apple pie tarts for 15-20 minutes or until the puff pastry is golden brown.
